Just look at that golden brown chicken that’s wrapped lovingly around a perfect garlic-y spinach and feta cheese mixture. Take that, then bake it in a bath of Italian-seasoned chicken broth and butter and you have a unreal yummy + healthy dinner that is just irresistible- even for picky eaters!

 910 g chicken breast
 255 g slices fully cooked ham
 1 tbsp olive oil
 ½ tbsp garlic powder
 75 g feta cheese
 ¼ cup red bell pepper (finely diced))
 118 ml chicken broth
 1 tbsp butter
 ¼ tbsp garlic powder
 ½ tbsp italian seasoning

Pound out the chicken to ¼th in width. Season liberally with salt and pepper.

In a small pot, add the frozen spinach, olive oil, and garlic powder. Cook on medium-high heat until spinach is defrosted. Remove from heat and stir in the feta cheese and red bell pepper.

Lay the spinach mixture evenly on the inside of each flattened chicken breast. Roll the chicken breast up using toothpicks to help secure them. Tie with cooking twine to secure and lay the rolls in a baking dish.

In a small pot, combine the chicken broth, butter, garlic powder, and Italian seasoning over medium heat, stirring until the butter melts. Pour the broth mixture over the chicken.

Bake for 30-35 minutes until done. I chose to broil the chicken for a few minutes to achieve a pretty golden color!

Serve with pasta, rice, quinoa, etc on the side for a full meal!
